What is Kollu Vadai?
Kollu Vadai, also known as Horse Gram Vadai, is a traditional South Indian deep-fried snack made using kollu (horse gram). It is rich in protein, fiber, and iron, making it a healthy snack option compared to regular vadai varieties.

Ingredients:
Kollu (Horse gram) – ¼ kg
Kadalai paruppu (Gram dal) – 100 g
Dry red chillies – 3 to 4
Garlic (crushed) – 10 to 15 cloves
Fennel seeds – 1 tbsp
Big onion – 1 (finely chopped)
Green chilli – 1 to 2 (finely chopped)
Curry leaves – few
Coriander leaves – few
Asafoetida (hing) – a pinch
Salt – to taste
Oil – for deep frying
To Grind:
Kollu
Gram dal
Red chillies
Garlic crushed
Fennel seeds
Hing
Method:
2.Soak kadalai parrupu in hot water for one hour
3.Grind kollu, gram dal, red chillies, garlic, fennel seeds, and hing coarsely without adding water
4.Add sliced onions,greenchilly,salt,curry leaves,coriander and mix all well
5.Heat Oil in a pan on medium flame
6.Shape the mixture into small patties using a ziplock cover.
7.Now, the oil would have come to the medium hot temperature. Check it and drop the patties one by one slowly into the oil.
8.Fry till both the sides turns crispy and slightly darker in colour. Flip in between using a ladle for proper frying of patties.
9.Once done, transfer to the plate covered with paper tissue to absorb the excess oil.
Tips for Perfect Kollu Vadai
Do not add water while grinding
Grind batter coarsely for crispiness
Fry on medium flame only
Can be made without onion for fasting days
